#Isolationbaking: recipes with leftovers by José Giral y Pereira

#Isolationbaking continues with a trip to Spain, where we have an entire dossier dedicated to easy and tasty recipes with leftovers compiled by José Giral y Pereira, prime minister during the second Spanish Republic in 1936, and again President of the Spanish Republic in exile between 1945 and 1947. Flan with stale bread

2 cups grated stale bread
2 cups milk
½ cups sugar (or depending on your taste)
1 cup caramel

Grate and sift the stale bread.
Season the milk with sugar, sale (1/2 pinches), and vanilla or cinnamon.
Immerse the bread in the milk until soaked.
Add two egg yolks and stir carefully.
Caramel the sugar in the stamp.
Cook in the oven using the bain-marie technique until it thickens and browns.

Aubergines in the plate

Wash and clean the aubergines.
Cut them in big slices.
Boil in water and a pinch of salt until they are slightly cooked.
Prepare a mirepoix with garlic, onion, tomato, pepper, ham, bacon, olives, capers…
Add the strained aubergines to the mix.
Cook 5 to 10 minutes at low heat.
Get off the fire and cover with a beaten egg.
Add grated stale bread on top.
Cook in the oven until ready.
